«NOUVELLE CUISINE» КАК ФЕНОМЕН КУЛЬТУРНОЙ И СОЦИАЛЬНОЙ ТРАНСФОРМАЦИИ ФРАНЦИИ 1970-Х ГОДОВ

Аннотация. Статья посвящена анализу nouvelle cuisine как феномена культурной и социальной трансформации Франции 1970-х годов. Цель исследования — выявить механизмы формирования новой гастрономической модели и определить её роль в процессах модернизации французской культуры. Новая кухня интерпретируется не как разрыв с традицией haute cuisine, а как форма её внутренней адаптации к условиям постиндустриального общества, эволюция потребительских практик и изменение представлений о теле, здоровье и вкусе. В статье анализируется институциональный конфликт между классической гастрономической моделью и новой кухней, а также процессы символической легитимации через гастрономическую критику и деятельность гидов Gault–Millau и Michelin. Научная новизна исследования заключается в рассмотрении nouvelle cuisine как адаптационного механизма традиционной культуры, а его результаты могут быть использованы в дальнейших исследованиях истории повседневности, гастрономической идентичности и культурной модернизации.

NOUVELLE CUISINE AS A PHENOMENON OF CULTURAL AND SOCIAL TRANSFORMATION IN FRANCE IN THE 1970S

Abstract. This article examines nouvelle cuisine as a phenomenon of cultural and social transformation in France during the 1970s. The study aims to identify the mechanisms behind the formation of this new gastronomic model and to determine its role in the processes of French cultural modernization. The new cuisine is interpreted not as a rupture with the haute cuisine tradition, but rather as a form of its internal adaptation to the conditions of post-industrial society, evolving consumer practices, and shifting perceptions of the body, health, and taste. The article analyzes the institutional conflict between the classical gastronomic model and the new cuisine, as well as the processes of symbolic legitimization through gastronomic criticism and the activities of the Gault–Millau and Michelin guides. The scientific novelty of the research lies in approaching nouvelle cuisine as an adaptive mechanism of traditional culture. Its findings may contribute to further studies in the history of everyday life, gastronomic identity, and cultural modernization.
