В данной статье автором представлена классификация предприятий индустрии питания по различным признакам, обозначены важные аспекты для жизни населения. Проведен анализ состояния рынка общественного питания в России на основе статистических показателей, отражены ключевые тенденции в индустрии питания, выделены основные проблемные зоны функционирования и обозначены направления развития. Отмечено, что владельцы бизнеса и управляющие, принимая своевременные и обоснованные управленческие решения, обеспечивают быстрое и гибкое реагирование на изменения внешней рыночной среды и запросы целевой аудитории, в том числе за счёт обновления ассортимента, улучшения качества предлагаемой продукции и оказываемых услуг, которые, в свою очередь, способствуют повышению устойчивости и сохранению конкурентоспособности компании.
In modern conditions, the activities of catering establishments are faced with challenges and new trends, such as the transformation of consumer preferences, the need to introduce innovative technologies, the growing importance of online reputation, etc. In this article, the author presents a classification of food industry enterprises according to various criteria, identifies important aspects for the life of the population. The analysis of the state of the catering market in Russia is carried out on the basis of statistical indicators, key trends in the food industry are reflected, the main problem areas of functioning are highlighted and the directions of development are outlined. It is noted that business owners and managers, making timely and informed management decisions, ensure a quick and flexible response to changes in the external market environment and the needs of the target audience, including by updating the assortment, improving the quality of products and services offered, which, in turn, contribute to increasing the sustainability and maintaining the competitiveness of the company.
